Soft, bakery-style buns filled with creamy cheesecake and sweet apple crumble, perfect for brunch or dessert.

  • 1 cup warm milk (105-115°F)
  • 2 ¼ teaspoons active dry yeast
  • ½ cup granulated sugar
  • 1 teaspoon salt
  • 2 large eggs, room temperature
  • ½ cup unsalted butter, softened
  • 4 ½ cups all-purpose flour, plus more for dusting
  • For the Cheesecake Filling:
  • 8 ounces cream cheese, softened
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • For the Apple Filling:
  • 2 cups diced apples (Honeycrisp or Fuji recommended)
  • ¼ cup brown sugar
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 tablespoon lemon juice
  • For the Crumble Topping:
  • ½ cup all-purpose flour
  • ¼ cup brown sugar
  • ¼ cup cold unsalted butter, cut into pieces
  • ½ teaspoon cinnamon

Instructions

  1. In a large bowl, combine warm milk and yeast. Let stand for 5-10 minutes until foamy.
  2. Stir in sugar, salt, eggs, and softened butter into the yeast mixture.
  3. Gradually add flour, mixing until a soft dough forms. Knead on a floured surface for 8-10 minutes until smooth and elastic.
  4. Place dough in a greased bowl, cover, and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  5. While dough rises, prepare the cheesecake filling: Beat cream cheese and sugar until smooth. Beat in egg and vanilla extract.
  6. Prepare the apple filling: In a saucepan, combine diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Cook over medium heat until apples are softened, about 5-7 minutes. Let cool.
  7. Prepare the crumble topping: In a small bowl, combine flour, brown sugar, and cinnamon. Cut in cold butter with a pastry blender or your fingers until crumbly.
  8. Punch down the risen dough. Divide into 12 equal portions.
  9. Flatten each portion into a disc. Place a spoonful of cheesecake filling and a spoonful of apple filling in the center of each disc.
  10. Pinch the edges of the dough together to seal the fillings inside.
  11. Place buns seam-side down on a baking sheet lined with parchment paper. Cover and let rise for 30 minutes.
  12. Preheat oven to 375°F (190°C).
  13. Brush buns with a little milk or egg wash (optional). Sprinkle generously with crumble topping.
  14. Bake for 18-22 minutes, or until golden brown.
  15. Let cool on a wire rack before serving.

Notes

  • For make-ahead, assemble the buns up to the second rise, cover, and refrigerate overnight. Let them sit at room temperature for 30 minutes before baking.
  • You can freeze baked buns once completely cooled. Reheat in a 300°F oven for 5-10 minutes.
  • Adjust apple filling sweetness based on your preference and apple tartness.
