A festive fall salad featuring crisp Honeycrisp apples, salty feta cheese, and crunchy candied walnuts, all tossed in a tangy apple cider vinaigrette. Perfect as a Thanksgiving side or a healthy holiday salad.

  • 4 cups arugula
  • 2 Honeycrisp apples, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/2 cup candied walnuts
  • 1/4 cup thinly sliced red onion
  • For the Vinaigrette:
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey
  • Salt and black pepper to taste

Instructions

  1. Prepare the vinaigrette: In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, and honey. Season with salt and pepper.
  2. Assemble the salad: In a large bowl, combine arugula, sliced apples, crumbled feta, candied walnuts, and red onion.
  3. Dress the salad: Pour the vinaigrette over the salad and toss gently to coat all ingredients.
  4. Serve immediately.

Notes

  • For candied walnuts, toss walnuts with a tablespoon of maple syrup and a pinch of salt, then toast in a 350°F (175°C) oven for 8-10 minutes until fragrant.
  • You can substitute other crisp apples like Fuji or Gala.
  • For a sweeter salad, add dried cranberries.
  • If you don’t have arugula, baby spinach or mixed greens work well.
