Instructions

  1. Combine the diced apple, 2 tablespoons of granulated sugar, and 1/2 teaspoon of cinnamon in a small bowl. Set aside.
  2. In a separate medium bowl, whisk together the flour, baking powder, and salt.
  3. In a third small bowl, whisk together the 1/4 cup milk, egg, and 1 teaspoon of vanilla extract.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix.
  5. Gently fold the apple mixture into the batter.
  6. Heat about 2 inches of vegetable oil in a deep, heavy-bottomed pot or Dutch oven to 350°F (175°C). Monitor the temperature closely.
  7. Carefully drop tablespoon-sized portions of the batter into the hot oil, ensuring you do not overcrowd the pot.
  8. Fry for 2 to 3 minutes per side, turning once, until the bites are golden brown and cooked through.
  9. Remove the fritter bites with a slotted spoon and place them on a wire rack lined with paper towels to drain excess oil.
  10. While the fritters cool slightly, prepare the glaze: Whisk together the powdered sugar, 2 tablespoons of milk, and 1/2 teaspoon of vanilla extract until smooth.
  11. Dip or drizzle the warm apple fritter bites with the vanilla glaze. Serve immediately for the best texture.
