  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 medium apples, peeled, cored, and diced (about 1 1/2 cups)
  • 1/4 cup brown sugar (for swirl)
  • 1 teaspoon ground cinnamon (for swirl)
  • 1/2 cup powdered sugar (for glaze)
  • 1 tablespoon milk or water (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, 1 teaspoon cinnamon, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then mix in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, mixing just until combined. Do not overmix.
  5. In a small bowl, mix the brown sugar and remaining 1 teaspoon cinnamon for the swirl. Gently fold half of the diced apples into the batter.
  6. Pour half of the batter into the prepared loaf pan. Sprinkle the cinnamon-sugar mixture evenly over the batter. Top with the remaining diced apples, then spread the remaining batter over the apples.
  7. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
  9. While the bread cools, prepare the glaze: Whisk together the powdered sugar and 1 tablespoon milk until smooth. Drizzle the glaze over the cooled loaf. Slice and serve.
