Create an elegant spring appetizer using fresh asparagus and tangy goat cheese on a flaky puff pastry crust. This recipe is simple to assemble for your next gathering.

Ingredients

  • 1 sheet frozen puff pastry, thawed
  • 1 tablespoon olive oil
  • 1 bunch fresh asparagus, trimmed
  • 4 ounces soft goat cheese, crumbled
  • 1 large egg, lightly beaten
  • 1 tablespoon heavy cream
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. Unfold the thawed puff pastry sheet onto the prepared baking sheet. Score a 1-inch border around the edges of the pastry using a knife, being careful not to cut all the way through.
  3. Toss the trimmed asparagus with olive oil, salt, and pepper. Arrange the asparagus evenly inside the scored border of the pastry.
  4. In a small bowl, whisk together the egg and heavy cream. Sprinkle the crumbled goat cheese over the asparagus.
  5. Carefully pour the egg and cream mixture over the cheese and asparagus.
  6. Bake for 18 to 20 minutes, or until the pastry is golden brown and puffed, and the cheese is slightly melted.
  7. Remove from the oven and let cool on the baking sheet for 5 minutes before slicing and serving.

Notes

  • For a richer flavor, lightly brush the pastry border with an egg wash (one egg beaten with 1 teaspoon water) before baking.
  • If you do not have fresh asparagus, use frozen, thawed, and patted very dry asparagus spears.
