Make a fresh, vibrant, and satisfying authentic Greek Salad (Horiatiki) with crisp vegetables, creamy feta, and a tangy homemade dressing. This recipe is quick, healthy, and perfect for any meal.

Ingredients

  • 3 large ripe tomatoes, cut into wedges
  • 1 large cucumber, peeled and sliced thickly
  • 1 green bell pepper, seeded and sliced
  • 1/2 red onion, thinly sliced
  • 1 cup Kalamata olives, whole or pitted
  • 8 oz block of good quality feta cheese, cut into large cubes
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the vegetables: Cut the tomatoes into wedges, slice the cucumber thickly, slice the green pepper, and thinly slice the red onion. Place all prepared vegetables into a large mixing bowl.
  2. Add the olives to the bowl with the vegetables.
  3. Make the dressing: In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, sea salt, and black pepper until combined.
  4. Pour the dressing over the vegetables and gently toss everything together. Do not overmix.
  5. Arrange the salad on a serving platter or in a shallow bowl.
  6. Place the large cubes of feta cheese on top of the vegetables. Do not mix the feta into the salad.
  7. Sprinkle an extra pinch of dried oregano over the feta cheese before serving.

Notes

  • This is an authentic Horiatiki salad; it does not contain lettuce.
  • For the best flavor, use high-quality feta cheese that is packed in brine.
  • You can add a slice of fresh bread on the side to soak up the flavorful juices at the bottom of the bowl.
  • This salad works well for meal prep if you store the dressing and feta separately until serving time.
