  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 hamburger buns
  • 4 slices sharp cheddar cheese (optional, for base layer)
  • 4 tablespoons butter, softened
  • 8 slices thick-cut bacon
  • 4 ounces blue cheese, crumbled
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • Lettuce leaves
  • Tomato slices

Instructions

  1. Prepare the bacon: Cook the 8 slices of bacon in a skillet over medium heat until crisp. Remove bacon and set aside on paper towels. Reserve 1 tablespoon of the bacon grease in the skillet.
  2. Form the patties: Divide the ground beef into four equal portions. Gently form them into patties slightly wider than the buns. Season both sides with salt and pepper.
  3. Cook the burgers: Heat a grill or the reserved skillet over medium-high heat. Cook the patties for 3 to 4 minutes per side for medium doneness. If using cheddar, place a slice on each patty during the last minute of cooking.
  4. Toast the buns: Spread the softened butter on the cut sides of the hamburger buns. Place them cut-side down on the grill or in a separate pan until golden brown, about 1 to 2 minutes.
  5. Make the sauce: In a small bowl, mix the mayonnaise and Dijon mustard.
  6. Assemble the bacon blue cheese burger: Spread the sauce mixture on the bottom bun. Place a lettuce leaf and tomato slice on top. Add the cooked patty. Top the patty with the crumbled blue cheese and two slices of crispy bacon. Place the top bun on the burger.

  • For extra flavor, mix a pinch of garlic powder into the mayonnaise and mustard sauce.
