A simple, family-friendly skillet chicken dinner with crispy bacon, garlic, and parmesan cheese.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil
  • 4 slices bacon, chopped
  • 4 cloves garlic, minced
  • 0.5 cup chicken broth
  • 0.5 cup heavy cream
  • 0.5 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley

Instructions

  1. Season chicken pieces with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add chicken to the skillet and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  4. Add chopped bacon to the skillet and cook until crispy. Remove bacon from skillet and drain most of the grease, leaving about 1 tablespoon.
  5. Add minced garlic to the skillet and cook for 1 minute until fragrant.
  6. Pour in chicken broth and scrape up any browned bits from the bottom of the skillet.
  7. Stir in heavy cream and bring to a simmer.
  8. Reduce heat to low and stir in Parmesan cheese until melted and the sauce thickens.
  9. Return chicken to the skillet and add cooked bacon. Stir to coat everything in the sauce.
  10. Garnish with fresh parsley before serving.

Notes

  • Serve with your favorite pasta, rice, or a side salad.
  • For a low-carb option, serve with steamed broccoli or cauliflower rice.
  • Ensure chicken is cooked to an internal temperature of 165°F (74°C).
