Easy Baked Ham and Cheese Croissants with Dijon Glaze

Make these easy baked ham and cheese croissants for a quick, crowd-pleasing breakfast or brunch. You get flaky pastry, savory ham, and gooey melted cheese in under 30 minutes.

  • 6 large pre-made croissants
  • 12 slices deli ham
  • 6 slices Swiss cheese (or cheddar)
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon Dijon mustard
  • 1 teaspoon poppy seeds (optional)
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Carefully slice each croissant horizontally, keeping the top and bottom halves together like a hinge. Do not cut all the way through.
  3. Place one slice of ham and one slice of cheese inside each opened croissant. Close the croissant gently.
  4. In a small bowl, whisk together the melted butter and Dijon mustard to create the glaze.
  5. Place the assembled croissants on the prepared baking sheet. Brush the tops evenly with the egg wash.
  6. Drizzle the Dijon-butter mixture over the tops of the croissants. Sprinkle with poppy seeds if you are using them.
  7. Bake for 12 to 15 minutes, or until the croissants are golden brown and the cheese is fully melted and bubbly.
  8. Remove from the oven and let cool slightly before serving warm.

Notes

  • For a bakery style finish, use store-bought refrigerated crescent roll dough instead of pre-made croissants and shape them around the filling before baking.
  • This recipe works well for make ahead brunch; assemble the croissants completely, cover, and refrigerate for up to 4 hours before baking. Add 3-5 minutes to the bake time if baking directly from the refrigerator.
  • If you want extra flavor, substitute the Dijon mustard with a honey mustard spread.
