Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • Wooden or metal skewers (soak wooden ones in water for 30 minutes)
  • 1 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tablespoons sriracha (adjust for heat preference)
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey or maple syrup
  • 1/2 teaspoon sesame oil
  • Optional garnish: chopped green onions, sesame seeds

Instructions

  1. Prepare the chicken marinade: In a bowl, toss the cubed chicken with olive oil, salt, pepper, garlic powder, and paprika. Let it sit while you prepare the sauce.
  2. Make the homemade Bang Bang Sauce: In a separate bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, rice vinegar, honey, and sesame oil until completely smooth. This is your creamy spicy sauce.
  3. Marinate: Reserve half of the Bang Bang Sauce for serving. Toss the seasoned chicken cubes with the remaining half of the sauce, ensuring all pieces are coated. Marinate for at least 15 minutes, or up to 4 hours in the refrigerator.
  4. Assemble skewers: Thread the marinated chicken pieces onto your prepared skewers, leaving a small space between each piece.
  5. Cook using your preferred method:
  6. For Grilling: Preheat your grill to medium-high heat (about 400°F). Place the skewers on the oiled grates. Grill for 4-5 minutes per side, turning occasionally, until the chicken is cooked through and has nice char marks (about 12-15 minutes total).
  7. For Air Frying: Preheat your air fryer to 380°F. Arrange the skewers in a single layer in the basket, working in batches if necessary. Air fry for 10-12 minutes, flipping halfway through, until the chicken reaches an internal temperature of 165°F.
  8. Serve immediately. Brush the cooked chicken skewers lightly with any remaining sauce from the cooking tray if desired, and serve with the reserved sauce for dipping. Garnish with green onions and sesame seeds.

Notes

  • For extra juicy chicken, avoid overcooking. Use a meat thermometer to check for 165°F internal temperature.
  • Adjust the sriracha in the sauce to control the spice level of your sweet heat chicken.
  • These make a great party food when served with rice or a simple slaw.
