1 pound flank steak, thinly sliced against the grain
1 tablespoon soy sauce
1 tablespoon cornstarch
1 tablespoon vegetable oil, plus more for cooking
1 pound broccoli florets
1 tablespoon minced garlic
1 tablespoon minced ginger
1/4 cup soy sauce
2 tablespoons oyster sauce
1 tablespoon brown sugar
1 teaspoon sesame oil
1/4 cup water or beef broth
1 teaspoon cornstarch
Cooked rice, for serving
Instructions
In a medium bowl, combine the sliced flank steak with 1 tablespoon soy sauce and 1 tablespoon cornstarch. Toss to coat and let it sit for 10 minutes.
While the beef marinates, prepare the sauce. In a small bowl, whisk together 1/4 cup soy sauce, oyster sauce, brown sugar, and sesame oil. In a separate small bowl, whisk together 1/4 cup water or beef broth with 1 teaspoon cornstarch to create a slurry.
Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat until shimmering. Add the marinated beef in a single layer (cook in batches if necessary to avoid crowding). Sear for 1-2 minutes per side until browned. Remove beef from the skillet and set aside.
Add a little more vegetable oil to the skillet if needed. Add the broccoli florets and stir-fry for 2-3 minutes until bright green and slightly tender-crisp.
Add the minced garlic and ginger to the skillet and stir-fry for about 30 seconds until fragrant.
Pour the prepared sauce mixture into the skillet. Bring to a simmer.
Stir the cornstarch slurry again and pour it into the simmering sauce, stirring constantly until the sauce thickens and becomes glossy.
Return the seared beef to the skillet. Toss everything together to coat the beef and broccoli in the sauce. Cook for another 1-2 minutes until the beef is heated through.
Serve immediately over cooked rice.
Notes
For extra tender beef, you can use a meat mallet to gently pound the steak slices before marinating.
If you don’t have oyster sauce, you can substitute with an additional tablespoon of soy sauce and a teaspoon of sugar.
Adjust the amount of garlic and ginger to your preference.
For a spicier kick, add a pinch of red pepper flakes with the garlic and ginger.
