  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tablespoons melted butter

Instructions

  1. Combine the flour, baking powder, salt, and sugar in a large bowl. Whisk these dry ingredients together.
  2. In a separate bowl, whisk together the milk and egg. Pour the wet mixture into the dry ingredients. Mix until just combined; do not overmix the batter.
  3. Stir in the melted butter gently. A few lumps in the batter are fine; this helps keep the pancakes fluffy.
  4. Heat a lightly oiled griddle or large skillet over medium heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  5. Cook for 2 to 3 minutes per side, until golden brown and bubbles appear on the surface. Flip and cook the second side until done.
