Instructions

  1. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. This takes about 3 minutes with an electric mixer.
  2. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla and almond extracts.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix the dough.
  4. Divide the dough in half. Flatten each half into a disk, wrap tightly in plastic wrap, and chill in the refrigerator for at least 1 hour. This step is necessary for cutout sugar cookies to hold their shape.
