8 oz leftover smoked brisket, chopped
4 slices sourdough bread
4 tbsp unsalted butter, softened
4 slices sharp cheddar cheese
4 slices Monterey Jack cheese
2 tbsp barbecue sauce (optional)
Instructions
Spread butter evenly on one side of each slice of bread.
Flip two slices of bread butter-side down onto a clean surface.
Layer two slices of cheddar and two slices of Monterey Jack cheese on each slice of bread.
Distribute the chopped brisket evenly over the cheese layers. If using, drizzle barbecue sauce over the brisket.
Top with the remaining two slices of bread, butter-side up.
Heat a non-stick skillet or griddle over medium heat.
Place the sandwiches in the hot skillet. Cook for 3 to 4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese is fully melted and molten.
Remove from the skillet, slice in half, and serve immediately.
Notes
For extra flavor, mix a small amount of your favorite spice rub into the softened butter before spreading it on the bread.
If your brisket is very lean, add a thin layer of mayonnaise on the inside of the bread instead of barbecue sauce for moisture.
