A quick and flavorful weeknight meal featuring chicken breasts topped with a fresh tomato and basil bruschetta mixture.

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups diced tomatoes
  • 1/4 cup chopped fresh basil
  • 2 cloves garlic, minced
  • 1 tbsp balsamic glaze
  • 1 tbsp olive oil
  • 1/4 cup shredded mozzarella cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season chicken breasts with salt and pepper.
  3. Heat 1 tbsp olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 2-3 minutes per side until golden brown.
  4. In a bowl, combine diced tomatoes, basil, minced garlic, balsamic glaze, and 1 tbsp olive oil. Season with salt and pepper to taste.
  5. Spoon the tomato mixture over the chicken breasts in the skillet.
  6. Top with mozzarella cheese, if using.
  7. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  8. Serve immediately.
