Make these simple, no-bake Buckeye Graham Crackers that combine a crunchy graham cracker base with creamy peanut butter filling and a rich chocolate coating. This recipe is quick to prepare and perfect for parties or gifting.

  • 24 full graham crackers
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 12 ounces semi-sweet chocolate chips
  • 2 tablespoons shortening or coconut oil

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a medium bowl, mix the peanut butter, powdered sugar, softened butter, and vanilla extract until smooth and creamy. This is your peanut butter filling.
  3. Take one graham cracker square and spread about 1 to 1.5 tablespoons of the peanut butter mixture evenly over the top.
  4. Top with a second graham cracker square to form a sandwich. Gently press the edges together.
  5. Repeat this process until all graham crackers are used, creating 12 sandwiches.
  6. Place the assembled sandwiches on the prepared baking sheet. Freeze for 30 minutes until the filling is firm.
  7. While the sandwiches chill, prepare the chocolate coating. In a microwave-safe bowl, combine the chocolate chips and shortening (or coconut oil). Microwave in 30-second intervals, stirring well after each, until the chocolate is completely melted and smooth.
  8. Remove the chilled sandwiches from the freezer. Dip each sandwich into the melted chocolate, ensuring it is fully coated. Leave a small circle of the peanut butter filling exposed on top to resemble a traditional buckeye candy.
  9. Place the dipped crackers back onto the parchment-lined sheet.
  10. Refrigerate the Buckeye Graham Crackers for at least 1 hour, or until the chocolate is set.
