Ingredients
Scale
1 cup (2 sticks) unsalted butter, melted
1 1/2 cups packed light brown sugar
2 large eggs
1 tablespoon vanilla extract
1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup butterscotch chips
Instructions
Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
In a large bowl, whisk the melted butter and brown sugar together until fully combined.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
In a separate medium bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Fold in the butterscotch chips.
Spread the batter evenly into the prepared baking pan.
Bake for 25 to 30 minutes, or until the edges are set and a toothpick inserted near the center comes out with moist crumbs attached.
Let the blondies cool completely in the pan on a wire rack before lifting them out using the parchment overhang.
Cut into squares for serving.
Notes
For extra chewy brown sugar bars, do not overbake. The center should look slightly underdone when you remove them from the oven.
You can substitute half of the butterscotch chips with semi-sweet chocolate chips for a different flavor profile.
Cooling completely before cutting prevents the bars from crumbling.
