  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup uncooked penne pasta
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons dried ranch seasoning mix
  • 1/4 cup chopped fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken pieces, Cajun seasoning, salt, and pepper. Cook until chicken is browned on all sides, about 5-7 minutes.
  2. Add uncooked penne pasta and chicken broth to the skillet. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 10-12 minutes, or until pasta is al dente and most of the liquid is absorbed.
  3. Stir in heavy cream, Parmesan cheese, and ranch seasoning mix. Cook, stirring, until the sauce is creamy and thickened, about 2-3 minutes.
  4. Garnish with fresh parsley before serving.

Notes

  • Adjust Cajun seasoning to your spice preference.
  • You can substitute chicken thighs for chicken breasts.
  • For a milder flavor, use less Cajun seasoning.
