  • 1 lb ground beef (80/20 recommended)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 4 slices American cheese
  • 1/2 cup finely diced white onion
  • 1/4 cup dill pickle chips
  • For the Sauce: 1/2 cup mayonnaise, 2 tablespoons ketchup, 1 tablespoon yellow mustard, 1 teaspoon white vinegar, 1/2 teaspoon sugar

Instructions

  1. Prepare the sauce: In a small bowl, whisk together the mayonnaise, ketchup, mustard, white vinegar, and sugar. Set aside.
  2. Cook the fries: Prepare the frozen french fries according to package directions until golden brown and crispy. Keep warm.
  3. Prepare the beef: Divide the ground beef into 8 equal portions (about 2 ounces each). Season lightly with salt, pepper, and garlic powder.
  4. Cook the smashburger topping: Heat a large, heavy skillet or griddle over medium-high heat. Place four beef portions on the hot surface. Immediately smash each portion very thin using a sturdy spatula, pressing down hard for about 10 seconds. Season the top surface with a pinch more salt and pepper.
  5. Cook the patties for 1-2 minutes until edges are crispy. Flip the patties. Immediately place one slice of American cheese on top of each patty. Cook for 30 seconds more until the cheese is melted. Remove from heat. Repeat with the remaining four portions.
  6. Assemble the loaded french fries: Place the cooked french fries on serving plates. Top evenly with the cheesy smashburger patties, breaking them into smaller pieces if needed to distribute over the fries.
  7. Finish the dish: Drizzle generously with the prepared burger sauce. Sprinkle with diced white onion and pickle chips. Serve immediately for the best texture.

  • For extra flavor, use a cast iron skillet to cook the smashburger beef; the high heat helps create the desired crispy edges.
