Cheesy Stuffed Meatloaf Bites

Quick and easy mini meatloaf muffins filled with gooey cheese, topped with a tangy glaze. Perfect for a family-friendly dinner or party appetizer.

  • 1.5 lbs ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1/4 cup finely chopped onion
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded cheddar cheese
  • For the Glaze:
  • 1/2 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin.
  2. In a large bowl, combine the ground beef, breadcrumbs, milk, egg, chopped onion, salt, and pepper. Mix gently until just combined. Do not overmix.
  3. Press about 2 tablespoons of the meat mixture into the bottom and up the sides of each muffin cup, creating a well in the center.
  4. Spoon about 1 tablespoon of shredded cheddar cheese into the well of each meatloaf cup.
  5. Top with another tablespoon of the meat mixture, sealing the cheese inside.
  6. In a small bowl, whisk together the ketchup, brown sugar, and Worcestershire sauce for the glaze.
  7. Spoon about 1 tablespoon of the glaze over the top of each meatloaf bite.
  8. Bake for 20-25 minutes, or until the meatloaf is cooked through and the glaze is bubbly.
  9. Let the meatloaf bites cool in the muffin tin for a few minutes before removing.

Notes

  • For extra flavor, you can add a pinch of garlic powder to the meat mixture.
  • If you don’t have a muffin tin, you can shape these into small loaves on a baking sheet. Adjust baking time as needed.
  • These are great for make-ahead meals; bake and reheat gently.
