  • 3 cups cooked chicken breast, shredded or diced
  • 4 cups cauliflower rice (fresh or frozen)
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese, divided
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup broccoli florets, small pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, sauté the diced onion until soft, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Add the cauliflower rice and broccoli florets to the skillet. Cook until the cauliflower rice has softened slightly, about 5-7 minutes. If using frozen rice, cook until moisture has evaporated.
  4. Stir in the shredded chicken, softened cream cheese, chicken broth, and heavy cream into the skillet mixture. Mix until the cream cheese is fully melted and the mixture is creamy.
  5. Season the mixture with salt, pepper, and garlic powder. Stir in half (1/2 cup) of the shredded cheddar cheese until combined.
  6. Transfer the entire mixture to your prepared baking dish.
  7. Top the casserole evenly with the remaining 1/2 cup of shredded cheddar cheese.
  8. Bake for 20 to 25 minutes, or until the casserole is bubbly and the cheese on top is melted and lightly golden brown.
  9. Remove from the oven and let it rest for 5 minutes before serving.
