Make this simple Chicken Cordon Bleu Casserole for a comforting, one-dish weeknight dinner that captures the classic flavors of chicken, ham, and Swiss cheese without the fuss.

  • 2 cups cooked, shredded chicken
  • 1 cup diced cooked ham
  • 1 (10.5 ounce) can cream of chicken soup
  • 1/2 cup milk
  • 1/2 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon black pepper
  • 1 cup shredded Swiss cheese, divided
  • 1 cup crushed Ritz crackers
  • 4 tablespoons melted butter

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×9 inch baking dish.
  2. In a large bowl, combine the shredded chicken, diced ham, cream of chicken soup, milk, mayonnaise, Dijon mustard, and black pepper. Mix until all ingredients are evenly coated.
  3. Stir in 3/4 cup of the Swiss cheese into the chicken mixture.
  4. Spread the chicken mixture evenly into the prepared baking dish.
  5. In a small bowl, combine the crushed Ritz crackers and melted butter. Sprinkle this mixture evenly over the top of the casserole.
  6. Bake for 20 minutes.
  7. Remove the casserole from the oven and sprinkle the remaining 1/4 cup of Swiss cheese over the top. Return to the oven and bake for another 5 to 7 minutes, or until the cheese is melted and bubbly and the topping is golden brown.
  8. Let the casserole rest for 5 minutes before serving.

Notes

  • For a make-ahead option, assemble the casserole completely, cover it, and refrigerate for up to 24 hours. Add 10 to 15 minutes to the initial baking time if baking directly from the refrigerator.
  • You can substitute cream of mushroom soup if you prefer a slightly different base flavor.
