2 medium zucchini, halved lengthwise and sliced
1 tablespoon olive oil or avocado oil
3 cloves garlic, minced
1 teaspoon fresh ginger, grated
1/4 cup low-sodium soy sauce
2 tablespoons water
1 tablespoon honey or maple syrup
1 teaspoon sesame oil
1/2 teaspoon cornstarch (optional, for thickening)
Pinch of red pepper flakes (optional)
Instructions
Prepare the sauce: In a small bowl, whisk together the soy sauce, water, honey, sesame oil, and cornstarch (if using). Set aside.
Heat the oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Add the minced garlic and grated ginger to the same skillet. Cook for 30 seconds until fragrant.
