Bake a traditional double crust apple pie featuring a flaky, buttery crust and a warm, cinnamon-spiced filling made with tender apples. This recipe delivers pure comfort food perfect for holidays or family gatherings.

  • Pastry for 9-inch double-crust pie (store-bought or homemade)
  • 68 medium apples (Granny Smith or Honeycrisp recommended)
  • 3/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 tablespoon unsalted butter, cut into small pieces
  • 1 egg (for egg wash)
  • 1 tablespoon milk (for egg wash)

Instructions

  1. Prepare your pie crusts. If making homemade, prepare the dough and chill it according to your recipe. Place one crust into a 9-inch pie plate. Trim the edges.
  2. Peel, core, and slice the apples into 1/4-inch thick pieces.
  3. In a large bowl, combine the sliced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice. Toss gently until the apples are evenly coated.
  4. Pour the apple mixture into the bottom pie crust. Dot the top of the filling with the small pieces of butter.
  5. Place the second pie crust over the filling. Trim the top crust edges and crimp the top and bottom crusts together to seal. Cut several slits in the top crust to allow steam to escape.
  6. For the egg wash, whisk the egg and milk together in a small bowl. Brush the top crust lightly with the egg wash. Sprinkle lightly with extra sugar if desired.
  7. Bake the pie at 425°F (220°C) for 15 minutes.
  8. Reduce the oven temperature to 375°F (190°C) and continue baking for 40 to 50 minutes, or until the crust is golden brown and the filling is bubbling. If the crust edges brown too quickly, cover them loosely with foil.
  9. Remove the pie from the oven and let it cool on a wire rack for at least 2 hours before slicing. This allows the filling to set.
