A quick and easy single-serve brownie made with cottage cheese, perfect for a high-protein, low-sugar treat.

  • 1 large egg
  • 1/4 cup almond flour
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons erythritol or other low-carb sweetener
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons sugar-free chocolate chips (optional)

Instructions

  1. In a microwave-safe mug or small bowl, combine cottage cheese and egg. Blend with an immersion blender or whisk until smooth.
  2. Add almond flour, cocoa powder, sweetener, baking powder, and salt. Mix until just combined.
  3. Stir in vanilla extract and sugar-free chocolate chips, if using.
  4. Microwave on high for 90 seconds to 2 minutes, or until set. Cooking time may vary depending on microwave wattage.
  5. Let cool slightly before enjoying.

Notes

  • For a richer chocolate flavor, add an extra teaspoon of cocoa powder.
