Fudgy, high-protein brownie bites made with blended cottage cheese. Perfect for a healthy dessert or post-workout snack.

Ingredients

Scale
  • 1 cup blended cottage cheese
  • 1/2 cup unsweetened applesauce
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup whole wheat flour
  • 1/4 cup unsweetened cocoa powder
  • 1 scoop (30g) chocolate protein powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a mini muffin tin.
  2. In a blender, combine the blended cottage cheese, applesauce, maple syrup, and vanilla extract. Blend until smooth.
  3. In a medium bowl, whisk together the whole wheat flour, cocoa powder, protein powder, baking powder, and salt.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Fold in the chocolate chips.
  6. Spoon the batter into the prepared mini muffin tin, filling each cup about two-thirds full.
  7. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  8. Let the bites cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For a fudgier texture, use dark cocoa powder.
  • You can substitute almond flour for whole wheat flour for a gluten-free option.
  • Store cooled bites in an airtight container in the refrigerator for up to 5 days.
