8 ounces cream cheese, softened
1/2 cup (1 stick) unsalted butter, softened
4 cups powdered sugar, sifted
1 teaspoon peppermint extract
2–3 drops food coloring (optional)
Instructions
Combine the softened cream cheese and butter in a large bowl. Beat them together with an electric mixer until the mixture is smooth and creamy.
Add the peppermint extract to the cream cheese mixture and mix until combined.
Gradually add the sifted powdered sugar, one cup at a time, mixing on low speed until fully incorporated after each addition. The dough will become thick.
If you want colored mints, divide the dough and mix in a few drops of food coloring into each portion until you achieve your desired shade.
Shape the dough. You can roll small balls and flatten them slightly, or press the dough into small candy molds. If using molds, press the dough firmly into the cavities.
Place the shaped mints on a baking sheet lined with parchment paper.
Allow the cream cheese mints to dry at room temperature for at least 4 hours, or preferably overnight, until they firm up and develop their signature melt-in-your-mouth texture.
Store finished mints in an airtight container.

For best results, ensure your cream cheese and butter are fully softened before mixing.
