Make rich, velvety steakhouse creamed spinach from scratch. This easy recipe uses fresh spinach and simple ingredients to create a decadent side dish ready in under 30 minutes.

Ingredients

  • 1 tablespoon butter
  • 1 small shallot, minced
  • 2 cloves garlic, minced
  • 1.5 lbs fresh spinach, washed and roughly chopped
  • 1/2 cup heavy cream
  • 2 ounces cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • Pinch of ground nutmeg
  • Salt and black pepper to taste

Instructions

  1. Melt the butter in a large skillet over medium heat. Add the minced shallot and cook until soft, about 3 minutes.
  2. Add the minced garlic and cook for 1 minute until fragrant. Do not let the garlic brown.
  3. Add the chopped fresh spinach to the skillet in batches. Cook, stirring occasionally, until all the spinach has wilted down completely.
  4. Stir in the heavy cream, cream cheese, and Parmesan cheese. Cook, stirring constantly, until the cream cheese has melted and the sauce is smooth.
  5. Season the mixture with salt, pepper, and a pinch of nutmeg. Stir well to combine all flavors.
  6. Cook for 2 to 3 minutes more, allowing the sauce to thicken slightly. Serve immediately as a perfect spinach side for steak.

Notes

  • If you use frozen spinach, thaw it completely and squeeze out as much excess water as possible before adding it to the skillet.
  • For a smoother sauce, you can blend a portion of the mixture before returning it to the pan.
  • This recipe is a great holiday spinach side dish option for Thanksgiving or Christmas.
