Make this hearty, creamy ground beef taco soup for a simple, satisfying Tex-Mex meal. This recipe uses accessible ingredients and comes together quickly, making it a perfect easy weeknight dinner idea.

Ingredients

Scale
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 packet (1 ounce) taco seasoning mix
  • 4 cups beef broth
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 (10 ounce) can diced tomatoes with green chilies (Rotel), undrained
  • 1 (4 ounce) can diced green chilies, undrained
  • 8 ounces cream cheese, cut into cubes
  • 1 cup shredded cheddar cheese (optional, for extra cheesiness)
  • 1/2 cup water (if needed for thinning)

Instructions

  1. Brown the ground beef in a large pot or Dutch oven over medium heat. Drain off any excess grease.
  2. Add the chopped onion to the pot with the beef and cook until softened, about 5 minutes.
  3. Stir in the taco seasoning mix and cook for 1 minute until fragrant.
  4. Pour in the beef broth, black beans, corn, diced tomatoes with green chilies, and diced green chilies. Bring the mixture to a simmer.
  5. Reduce the heat to low. Add the cubed cream cheese, one piece at a time, stirring constantly until each piece is fully melted and incorporated into the soup, creating a creamy texture.
  6. If the soup is too thick, stir in up to 1/2 cup of water until you reach your desired consistency.
  7. Stir in the shredded cheddar cheese, if using, until melted. Heat through for 5 minutes without boiling.
  8. Serve hot with your favorite taco toppings.

Notes

  • For a slow cooker creamy taco soup, brown the beef and onions separately, then combine all ingredients except the cream cheese and shredded cheese in the slow cooker. Cook on low for 6-8 hours or high for 3-4 hours. Stir in the cream cheese and shredded cheese during the last 30 minutes of cooking.
  • Toppings that work well include sour cream, avocado slices, crushed tortilla chips, fresh cilantro, or sliced jalapeños.
  • Use your favorite brand of taco seasoning; adjust the amount based on its salt content.
