Make this rich and creamy Crack Chicken Gnocchi for a satisfying weeknight dinner. This one-pan recipe combines tender chicken, pillowy gnocchi, bacon, and a savory ranch cream sauce for maximum flavor with minimal cleanup.

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 4 slices bacon, cooked and crumbled
  • 1 (16-ounce) package potato gnocchi
  • 1 cup low-sodium chicken broth
  • 8 ounces cream cheese, cubed
  • 1 packet (1 ounce) dry ranch seasoning mix
  • 1/2 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Parmesan cheese
  • 1/4 cup water (or more broth, if needed)
  • 2 cups fresh spinach
  • Salt and black pepper to taste

Instructions

  1. Season the chicken pieces lightly with salt and pepper. Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the chicken and cook until browned and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set aside.
  2. Add the crumbled bacon to the skillet and cook for 1 minute to warm through, if necessary.
  3. Add the gnocchi and chicken broth to the skillet. Bring the liquid to a simmer, scraping up any browned bits from the bottom of the pan. Cook according to gnocchi package directions, usually about 3 to 5 minutes, until the gnocchi floats.
  4. Reduce the heat to low. Stir in the cream cheese, dry ranch seasoning mix, and heavy cream until the cream cheese melts and the sauce is smooth.
  5. Stir in the shredded cheddar cheese and Parmesan cheese until fully incorporated and the sauce is creamy. If the sauce is too thick, add the water or a splash more broth until you reach your desired consistency.
  6. Return the cooked chicken to the skillet. Add the fresh spinach and stir until the spinach wilts into the sauce, about 1 minute.
  7. Taste the dish and adjust seasoning with salt and pepper if necessary. Serve immediately from the skillet.

Notes

  • For a tangier flavor, substitute half of the heavy cream with sour cream.
  • You can use pre-cooked rotisserie chicken to save 10 minutes of cooking time.
  • If you do not have ranch seasoning mix, combine 1 teaspoon dried parsley, 1 teaspoon dried dill, 1/2 teaspoon onion powder, and 1/2 teaspoon garlic powder.
