1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 medium yellow onion, chopped
2 cloves garlic, minced
4 cups chicken broth
1 (15 ounce) can diced tomatoes with green chilies, undrained
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
8 ounces lasagna noodles, broken into small pieces
1 cup heavy cream
1/2 cup ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 cup fresh spinach, roughly chopped
Instructions
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chicken pieces and cook until lightly browned on all sides. You do not need to cook them through at this stage.
Add the chopped onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
Pour in the chicken broth. Add the diced tomatoes with green chilies, Italian seasoning, salt, and pepper. Bring the mixture to a simmer.
Add the broken lasagna noodles to the simmering broth. Cook according to the noodle package directions, stirring often to prevent sticking, until the noodles are tender. This usually takes 10 to 12 minutes.
Reduce the heat to low. Stir in the heavy cream, ricotta cheese, mozzarella cheese, and Parmesan cheese until the cheeses melt and the soup becomes creamy. Stir until fully combined.
Stir in the fresh spinach. Cook just until the spinach wilts, about 1 to 2 minutes. Do not boil after adding the cream and cheese.

Notes
For a slow cooker white chicken soup variation, cook the chicken, broth, seasonings, and tomatoes in the slow cooker on low for 6 hours. Shred the chicken, then stir in the cream, cheeses, and broken noodles during the last 30 minutes of cooking. Add spinach at the end.
Use pre-cooked shredded chicken to reduce the initial cooking time for this quick chicken dinner.
You can substitute sun-dried tomatoes for the diced tomatoes with green chilies for a different flavor profile.
