8 oz soft goat cheese, chilled
1 large egg
1 tablespoon milk
1 cup panko breadcrumbs
1 teaspoon dried thyme
1/2 teaspoon garlic powder
Salt and black pepper to taste
Vegetable oil, for frying

Instructions
Place the chilled goat cheese in a bowl and let it soften slightly for about 10 minutes.
In a small bowl, whisk the egg and milk together.
In a separate shallow dish, combine the panko breadcrumbs, thyme, garlic powder, salt, and pepper.
Scoop tablespoon-sized amounts of the goat cheese and quickly roll them into balls. Work fast to keep the cheese cold.
Dip each cheese ball first into the egg wash, letting excess drip off.
Roll the cheese ball thoroughly in the seasoned panko mixture until fully coated. Place coated balls on a parchment-lined plate.
Chill the coated cheese balls in the refrigerator for at least 30 minutes. This helps them hold their shape during frying.
Heat about 2 inches of vegetable oil in a deep skillet to 350°F (175°C).
Carefully place 3-4 cheese balls into the hot oil, ensuring you do not overcrowd the pan.
Fry for 1 to 2 minutes, turning occasionally, until golden brown and crispy.
Remove the fried balls with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
Serve the warm goat cheese balls immediately with a drizzle of honey.
Notes
For a make-ahead appetizer, prepare the cheese balls through step 4 and freeze them on the baking sheet until solid. Transfer to a freezer bag. Fry directly from frozen, adding 30 seconds to the frying time.
You can bake these at 400°F (200°C) for 10-12 minutes if you prefer not to fry.
