2 cups grated zucchini, squeezed dry
1/2 cup all-purpose flour
1/4 cup grated Parmesan cheese
1 large egg, beaten
2 tablespoons chopped fresh chives or green onions
1/4 teaspoon salt
1/8 teaspoon black pepper
2 tablespoons olive oil or vegetable oil, for frying
Instructions
In a medium bowl, combine the grated zucchini, flour, Parmesan cheese, beaten egg, chives, salt, and pepper. Mix until just combined.
Heat the oil in a large skillet over medium-high heat.
Drop heaping tablespoons of the zucchini mixture into the hot skillet, flattening them slightly with the back of the spoon.
Fry for 3-4 minutes per side, until golden brown and crispy.
Remove the fritters from the skillet and drain them on a paper towel-lined plate.
Serve hot.
Notes
For extra crispy fritters, ensure you squeeze as much moisture as possible from the grated zucchini.
You can bake these fritters at 400°F (200°C) for 15-20 minutes, flipping halfway through, for a healthier option.
