A simple and hearty crock pot beef stroganoff recipe for a delicious weeknight dinner.

  • 2 pounds beef chuck roast, cut into 1-inch pieces
  • 1 cup beef broth
  • 1/2 cup sour cream
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/4 cup Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 12 ounces egg noodles
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. In a bowl, toss beef pieces with flour, salt, and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Brown beef on all sides. Transfer beef to your crock pot.
  3. Add chopped onion, sliced mushrooms, and minced garlic to the skillet. Cook until softened, about 5 minutes.
  4. Add the onion and mushroom mixture to the crock pot with the beef.
  5. Pour in beef broth, Worcestershire sauce, thyme, and bay leaf. Stir to combine.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until beef is tender.
  7. Remove the bay leaf. Stir in sour cream until well combined and heated through.
  8. Cook egg noodles according to package directions.
  9. Serve the beef stroganoff mixture over the cooked egg noodles. Garnish with fresh parsley.

Notes

  • For a thicker sauce, you can mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir it into the crock pot during the last 30 minutes of cooking.
  • You can substitute beef sirloin or round steak for the chuck roast if you prefer.
  • If you don’t have fresh mushrooms, you can use canned mushrooms, drained.
