Tender Crockpot Beef Tips and Gravy: The Easy Weeknight Dinner

Make unbelievably tender crockpot beef tips with a rich, savory gravy using your slow cooker. This set it and forget it recipe minimizes effort for a satisfying comfort food dinner.

  • 2 pounds beef stew meat (chuck roast or sirloin tips)
  • 1 packet (1 ounce) dry onion soup mix
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • Salt and pepper to taste

Instructions

  1. Place the beef stew meat into the basin of your slow cooker.
  2. Sprinkle the dry onion soup mix evenly over the beef.
  3. Pour the cream of mushroom soup and beef broth over the meat. Add the Worcestershire sauce.
  4. Stir the ingredients gently to coat the beef.
  5. Cover the slow cooker and cook on LOW for 7 to 8 hours or on HIGH for 3 to 4 hours until the beef is very tender.
  6. About 20 minutes before serving, mix the cornstarch and cold water in a small bowl to create a slurry. Stir this slurry into the slow cooker liquid.
  7. Increase the heat to HIGH (if necessary) and cook uncovered for 15 to 20 minutes, stirring occasionally, until the gravy thickens to your desired consistency.
  8. Taste the gravy and add salt and pepper if needed.
  9. Serve the crockpot beef tips and gravy immediately over mashed potatoes or egg noodles.

Notes

  • For extra flavor, you can lightly sear the beef tips in a hot skillet with oil before adding them to the slow cooker.
  • If you prefer a mushroom variation, substitute the cream of mushroom soup with 1 cup of beef broth and 8 ounces of sliced fresh mushrooms.
  • This recipe is excellent for making ahead; the flavor deepens overnight.
