Make this hearty and comforting Cowboy Soup in your slow cooker with minimal effort. This dump-and-go recipe uses ground beef, beans, corn, and simple seasonings for a satisfying family dinner.

  • 1.5 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 (15 oz) can kidney beans, rinsed and drained
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (15 oz) can whole kernel corn, drained
  • 1 cup beef broth
  • 1 packet (1 oz) taco seasoning mix
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1 cup diced potatoes

Instructions

  1. Place the chopped onion and minced garlic in the bottom of your slow cooker.
  2. Add the ground beef over the onions and garlic.
  3. Pour the diced tomatoes (with juice), rinsed and drained kidney beans, rinsed and drained black beans, and drained corn into the slow cooker.
  4. Add the beef broth, taco seasoning, chili powder, cumin, salt, and pepper. If using, add the diced potatoes now.
  5. Stir all ingredients together gently in the slow cooker until the seasoning is mixed in.
  6. Cover the slow cooker and cook on LOW for 6 to 8 hours, or on HIGH for 3 to 4 hours.
  7. Stir the soup before serving. Serve hot with your preferred toppings.

Notes

  • For a richer flavor, brown the ground beef in a skillet before adding it to the slow cooker. Drain off any excess grease first.
  • If you prefer a thicker soup, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir this slurry into the soup during the last 30 minutes of cooking on HIGH.
  • Serve this filling crockpot recipe with shredded cheddar cheese, sour cream, or crushed tortilla chips for added texture.
