Make this crisp, low-calorie cucumber mint cooler for instant spa-like refreshment on a hot day.

Ingredients

Scale
  • 1 medium cucumber, peeled and roughly chopped
  • 1/2 cup fresh mint leaves, packed
  • 2 cups cold water
  • 1 tablespoon fresh lime juice
  • 1 teaspoon raw sugar (optional, for slight sweetness)
  • Ice cubes

Instructions

  1. Place the chopped cucumber and mint leaves into a blender.
  2. Add 1 cup of the cold water to the blender.
  3. Blend on high speed until the mixture is completely smooth.
  4. Pour the blended mixture through a fine-mesh sieve set over a bowl, pressing down on the solids to extract all the liquid. Discard the pulp.
  5. Stir the lime juice and optional sugar into the cucumber-mint liquid.
  6. Add the remaining 1 cup of cold water to dilute the mixture to your preference.
  7. Serve immediately over ice cubes for a refreshing drink.

Notes

  • For an extra detox water effect, let the strained liquid sit in the refrigerator for 30 minutes before serving.
  • If you prefer a less intense mint flavor, reduce the mint leaves to 1/4 cup.
  • To make this a sparkling drink, substitute half of the still water with club soda.
