A quick and cheesy Tex-Mex casserole featuring seasoned ground beef, creamy sauce, and a crunchy Dorito topping. Perfect for busy weeknights or game day.

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can (10 ounces) Rotel diced tomatoes and green chilies, undrained
  • 1 can (10.5 ounces) cream of chicken soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • 1 bag (9 ounces) Nacho Cheese Doritos, crushed

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Brown the ground beef in a skillet over medium-high heat. Drain off any excess grease.
  3. Stir in the taco seasoning and Rotel tomatoes with their juice. Cook for 2 minutes, stirring occasionally.
  4. In a large bowl, combine the cream of chicken soup and sour cream. Stir in 1 cup of the shredded cheddar cheese.
  5. Add the meat mixture to the cream sauce and stir to combine.
  6. Spread the mixture evenly into a 9×13 inch baking dish.
  7. Top with the crushed Doritos.
  8. Sprinkle the remaining 1 cup of cheddar cheese over the Doritos.
  9. Bake for 20-25 minutes, or until the cheese is melted and bubbly.

Notes

  • For a chicken version, use 2 cups of cooked, shredded chicken instead of ground beef.
  • You can assemble this casserole ahead of time and refrigerate. Add a few extra minutes to the baking time if baking from cold.
  • Serve with your favorite Tex-Mex toppings like salsa, guacamole, or a dollop of sour cream.
