1 cup milk (any kind)
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1 cup diced cooked ham
1 cup shredded cheddar cheese
1/2 cup chopped fresh spinach
1/2 cup chopped bell peppers (any color)

Instructions
Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish with cooking spray.
In a large bowl, whisk together the eggs, cottage cheese, milk, salt, black pepper, and garlic powder until the mixture is smooth and the cottage cheese is mostly broken up. This creates a fluffy egg base.
Gently fold in the diced ham, shredded cheddar cheese, spinach, and bell peppers into the egg mixture.
Pour the entire mixture evenly into the prepared baking dish.
Bake for 30 to 35 minutes, or until the egg bake is set in the center and lightly golden brown on top. A knife inserted near the center should come out clean.

Notes
For a low-carb or keto friendly egg bake, omit any bread or hash browns if you choose to add a crust.
