1 sheet frozen puff pastry, thawed
4 ounces brie cheese, cut into small cubes
1/4 cup cranberry sauce
1 egg, beaten (for egg wash)
Optional: Chopped pecans for topping
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a mini muffin tin.
Unfold the thawed puff pastry sheet on a lightly floured surface. Cut the pastry into 12 equal squares.
Press each pastry square gently into the cups of the mini muffin tin, forming a small cup shape.
Place one cube of brie cheese into the bottom of each pastry cup.
Top the brie with about 1/2 teaspoon of cranberry sauce. If using, sprinkle a few chopped pecans over the top.
Brush the edges of the exposed pastry lightly with the beaten egg wash.
Bake for 12 to 15 minutes, or until the pastry is golden brown and the brie is melted and gooey.
Remove from the oven and let the brie bites cool in the tin for 5 minutes before carefully transferring them to a serving plate. Serve warm.
Notes
For a savory variation, substitute fig jam for cranberry sauce and top with a small piece of prosciutto before baking.
You can prepare the assembled, unbaked bites up to 4 hours ahead of time. Keep them covered in the refrigerator and add 2-3 minutes to the baking time.
If you do not have a mini muffin tin, you can cut the pastry into circles and wrap them around the brie cubes, sealing the edges well before baking on a flat baking sheet.
