1 cup granulated sugar
1/2 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon salt
1 cup water
1/2 cup (1 stick) unsalted butter, cut into pieces
2 large eggs, lightly beaten
1 teaspoon vanilla extract
Instructions
Preheat your oven to 350 degrees Fahrenheit. Place the unbaked pie crust into a 9-inch pie plate.
In a medium saucepan, whisk together the sugar, flour, cocoa powder, and salt.
Add the water and butter to the saucepan. Heat over medium heat, stirring constantly until the butter melts and the mixture just begins to simmer. Remove from heat immediately.
In a separate bowl, lightly beat the eggs. Slowly pour about half a cup of the hot chocolate mixture into the beaten eggs while whisking constantly to temper the eggs.
Pour the tempered egg mixture back into the saucepan with the remaining chocolate mixture. Stir well to combine.
Stir in the vanilla extract.
Pour the warm filling into the prepared pie crust.
Bake for 35 to 40 minutes, or until the edges are set but the center still has a slight wobble. The filling will firm up as it cools.
