2 pounds ground beef
1 cup breadcrumbs
1/2 cup milk
2 large eggs
1 large onion, thinly sliced
2 tablespoons butter
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup Worcestershire sauce
1/4 cup ketchup
4 slices Swiss cheese
Instructions
Preheat your oven to 375°F (190°C).
In a large skillet, melt the butter and olive oil over medium heat. Add the sliced onion and cook, stirring occasionally, until deeply caramelized, about 25-30 minutes. Season with salt and pepper.
In a large bowl, combine the ground beef, breadcrumbs, milk, eggs, Worcestershire sauce, and ketchup. Add half of the caramelized onions to the mixture and mix gently until just combined. Do not overmix.
Shape the meat mixture into a loaf on a baking sheet or in a loaf pan.
Bake for 45 minutes.
Remove the meatloaf from the oven and top with the remaining caramelized onions and Swiss cheese slices.
Return to the oven and bake for another 10-15 minutes, or until the cheese is melted and bubbly and the meatloaf is cooked through (internal temperature of 160°F or 71°C).
Let the meatloaf rest for 10 minutes before slicing and serving.
Notes
For an even richer flavor, you can use a combination of ground beef and ground pork.
Serve with your favorite mashed potatoes or a side salad.
If you prefer a glaze, mix ketchup with a little brown sugar and mustard and spread over the top during the last 15 minutes of baking.
