Instructions

  1. Pour 4 cups of vegetable oil into a deep, heavy-bottomed pot or Dutch oven until it reaches about 2 inches deep. Heat the oil over medium-high heat until it reaches 375 degrees Fahrenheit. Use a thermometer to monitor the temperature.
  2. While the oil heats, prepare the batter. In a medium bowl, whisk together the egg, milk, and vanilla extract until combined.
  3. In a separate large bowl, whisk together the granulated sugar, baking powder, and salt. Add the flour and whisk until just combined. Do not overmix; a few small lumps are acceptable.
  4. Slowly pour the wet ingredients into the dry ingredients. Whisk until the batter is smooth but still thick. The batter should flow slowly from a spoon.
  5. Transfer the batter to a funnel with a small hole opening, or use a pastry bag fitted with a small round tip (about 1/4 inch opening). Cover the opening with your finger.
