- 2 pounds Yukon Gold potatoes, peeled and quartered
- 1 head garlic
- 1/2 cup heavy cream
- 4 tablespoons unsalted butter
- 1/2 cup grated Parmesan cheese
- 1/4 cup milk
- Salt to taste
- Black pepper to taste
- Preheat oven to 400°F (200°C).
- Cut the top off the head of garlic, exposing the cloves. Drizzle with olive oil, wrap in foil, and roast for 40 minutes, or until soft.
- Boil the potatoes in salted water until tender, about 15-20 minutes. Drain well.
- While potatoes are boiling, warm the heavy cream and butter in a small saucepan over low heat until butter is melted.
- Squeeze the roasted garlic cloves from their skins into a bowl. Mash with a fork.
- Mash the drained potatoes until smooth.
- Add the warm cream mixture, mashed roasted garlic, Parmesan cheese, and milk to the mashed potatoes. Stir until well combined and creamy.
- Season with salt and pepper to taste.
- Serve immediately or keep warm.
Notes
- For make-ahead, prepare the mashed potatoes up to step 6. Reheat gently on the stovetop or in the oven, adding a splash more milk or cream if needed.
- To hold warm for a crowd, transfer to a slow cooker on the “warm” setting.
- Yukon Gold potatoes provide a creamy texture. Russets can also be used.
- Consider adding fresh chives or parsley for color and freshness.
