Garlic Parmesan Mashed Potatoes

Creamy mashed potatoes with roasted garlic and Parmesan cheese, perfect for holidays or Sunday dinners.

Ingredients

  • 2 pounds Yukon Gold potatoes, peeled and quartered
  • 1 head garlic
  • 1/2 cup heavy cream
  • 4 tablespoons unsalted butter
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup milk
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut the top off the head of garlic, exposing the cloves. Drizzle with olive oil, wrap in foil, and roast for 40 minutes, or until soft.
  3. Boil the potatoes in salted water until tender, about 15-20 minutes. Drain well.
  4. While potatoes are boiling, warm the heavy cream and butter in a small saucepan over low heat until butter is melted.
  5. Squeeze the roasted garlic cloves from their skins into a bowl. Mash with a fork.
  6. Mash the drained potatoes until smooth.
  7. Add the warm cream mixture, mashed roasted garlic, Parmesan cheese, and milk to the mashed potatoes. Stir until well combined and creamy.
  8. Season with salt and pepper to taste.
  9. Serve immediately or keep warm.

Notes

  • For make-ahead, prepare the mashed potatoes up to step 6. Reheat gently on the stovetop or in the oven, adding a splash more milk or cream if needed.
  • To hold warm for a crowd, transfer to a slow cooker on the “warm” setting.
  • Yukon Gold potatoes provide a creamy texture. Russets can also be used.
  • Consider adding fresh chives or parsley for color and freshness.
