  • 1 pound spaghetti or linguine
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 1/4 cup unsalted butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Place the pasta, chicken broth, minced garlic, salt, pepper, and red pepper flakes (if using) into a large pot or Dutch oven.
  2. Bring the mixture to a boil over medium-high heat. Stir frequently to prevent the pasta from sticking to the bottom of the pot.
  3. Reduce the heat to medium-low and continue to simmer, stirring often, until the pasta is cooked through and most of the liquid has been absorbed, about 10 to 12 minutes.
  4. Remove the pot from the heat. Stir in the heavy cream and the butter until the butter melts completely.
  5. Add the grated Parmesan cheese and stir until the sauce is smooth and creamy. If the sauce is too thick, add a splash more broth or cream until you reach your desired consistency.
  6. Serve immediately. Top each serving with extra Parmesan cheese and fresh parsley.

  • For a richer flavor, use half-and-half instead of heavy cream.
