Make this easy, refreshing ginger lemon cooler at home. It uses a simple ginger syrup for maximum flavor and is perfect as a thirst-quenching summer drink.

  • 1 cup fresh ginger, peeled and roughly chopped
  • 1 cup water (for syrup)
  • 1 cup granulated sugar (for syrup)
  • 1 cup fresh lemon juice (about 46 lemons)
  • 3 cups cold water or sparkling water
  • Ice cubes
  • Lemon slices and mint sprigs for garnish

Instructions

  1. Prepare the ginger syrup: Combine the chopped ginger, 1 cup water, and 1 cup sugar in a small saucepan.
  2. Bring the mixture to a simmer over medium heat, stirring until the sugar dissolves completely.
  3. Reduce heat to low and let it gently simmer for 15 minutes to infuse the ginger flavor.
  4. Remove the saucepan from the heat and let the syrup cool completely (about 30 minutes).
  5. Strain the syrup through a fine-mesh sieve into a clean jar, pressing down on the ginger solids to extract all liquid. Discard the solids. This is your ginger simple syrup.
  6. To make the cooler: In a large pitcher, combine the fresh lemon juice and 1 cup of the prepared ginger syrup. Stir well.
  7. Taste the mixture. Add more syrup if you prefer it sweeter or more ginger-flavored.
  8. Add the 3 cups of cold water or sparkling water to the pitcher. Stir again.
  9. Serve immediately over plenty of ice. Garnish each glass with a lemon slice and a mint sprig.

Notes

  • For a healthier option, substitute half the granulated sugar in the syrup with honey or maple syrup.
  • If you prefer a natural ginger lemon soda, use sparkling water for the final dilution step.
  • You can make the ginger syrup up to one week ahead and store it covered in the refrigerator.
