Elegant and easy goat cheese and honey bites made with flaky puff pastry.

- 1 sheet puff pastry, thawed
- 4 ounces goat cheese, softened
- 2 tablespoons honey, plus more for drizzling
- 1 tablespoon fresh thyme leaves (optional)
- 1 tablespoon chopped walnuts or pecans (optional)
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Unfold the puff pastry sheet onto a lightly floured surface. Cut it into 12 equal squares.
- Place the puff pastry squares onto the prepared baking sheet.
- In a small bowl, combine the softened goat cheese and 2 tablespoons of honey. Mix until smooth.
- Spoon about 1 teaspoon of the goat cheese mixture onto the center of each puff pastry square.
- If using, sprinkle with fresh thyme leaves and chopped nuts.
- Bake for 12-15 minutes, or until the puff pastry is golden brown and puffed up.
- Remove from oven and let cool slightly. Drizzle with additional honey before serving.
Notes
- For a make-ahead option, prepare the bites up to step 5 and refrigerate. Bake just before serving.
- These bites are best served warm.
- You can substitute cream cheese for goat cheese if preferred.
- Add a pinch of red pepper flakes to the goat cheese mixture for a sweet and spicy kick.
