Quick Zesty Grilled Shrimp Skewers

Make fast, high-protein grilled shrimp skewers for a light appetizer or main dish at your next barbecue.

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 clove garlic, minced
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Wooden or metal skewers

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes.
  2. In a medium bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, smoked paprika, salt, and pepper.
  3. Add the peeled and deveined shrimp to the marinade and toss to coat evenly. Let the shrimp marinate for 10 minutes. Do not marinate longer, as the acid can start to cook the shrimp.
  4. Thread the marinated shrimp onto the prepared skewers, about 4 to 5 shrimp per skewer.
  5. Preheat your grill to medium-high heat. Clean and lightly oil the grates.
  6. Place the shrimp skewers on the hot grill. Grill for 2 to 3 minutes per side, until the shrimp are pink and opaque throughout.
  7. Remove from the grill and serve immediately.

Notes

  • For extra color and flavor, thread pieces of bell pepper or red onion between the shrimp on the skewers.
  • If you want a slightly sweeter glaze, add 1 teaspoon of honey to the marinade mixture.
