  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 can (10.5 oz) condensed cream of celery soup
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 large Russet potatoes, thinly sliced (about 1/8 inch thick)
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat your oven to 375 degrees F. Lightly grease a 9×13 inch baking dish.
  2. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  3. Add the ground beef to the skillet. Cook, breaking it up, until fully browned. Drain off any excess grease. Season the cooked beef with salt and pepper. Set aside.
  4. In a large bowl, whisk together the cream of mushroom soup, cream of celery soup, milk, salt, and pepper until smooth. This forms your creamy sauce base.
  5. Arrange half of the thinly sliced potatoes in an even layer in the bottom of the prepared baking dish.
  6. Spread half of the cooked ground beef mixture over the potatoes. Pour half of the soup mixture evenly over the beef layer. Sprinkle with half of the shredded cheddar cheese.
  7. Repeat the layering process: remaining potatoes, remaining ground beef, remaining soup mixture, and top with the remaining cheddar cheese.
  8. Cover the baking dish tightly with aluminum foil. Bake for 45 minutes.
  9. Remove the foil and bake uncovered for an additional 15 to 20 minutes, or until the potatoes are tender when pierced with a fork and the cheese is bubbly and golden brown.
  10. Let the hamburger potato casserole rest for 10 minutes before slicing and serving.
