Enjoy these protein-packed waffles, perfect for a healthy breakfast or meal prep. They are designed to provide 30-40g of protein per serving and can be customized with kid-approved flavors.

Ingredients

  • 1 cup whole wheat flour
  • 1 scoop (30g) vanilla whey protein powder
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp sweetener (optional)
  • 1 cup unsweetened almond milk
  • 1/2 cup egg whites
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • Optional add-ins: 1/4 cup berries, 1 tbsp chocolate chips

Instructions

  1. In a large bowl, whisk together the flour, protein powder, baking powder, salt, and sweetener.
  2. In a separate bowl, whisk together the almond milk, egg whites, melted coconut oil, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  4. If using, gently fold in your desired add-ins.
  5. Preheat your waffle iron according to the manufacturer’s instructions.
  6. Lightly grease the waffle iron.
  7. Pour about 1/2 cup of batter onto the hot waffle iron.
  8. Cook for 4-6 minutes, or until golden brown and cooked through.
  9. Repeat with the remaining batter.
  10. Serve immediately or let cool completely before storing.

Notes

  • For meal prep, cool waffles completely and store in an airtight container in the refrigerator for up to 3 days or in the freezer for up to 2 months. Reheat in a toaster or oven.
  • Adjust sweetener to your preference.
  • You can substitute Greek yogurt for some of the liquid for added protein and creaminess.
  • Experiment with different protein powder flavors.
